In a small saucepan set over medium-high heat, combine the water, granulated sugar, mint leaves, and blood orange juice. Bring to a boil and cook until the sugar has dissolved. Remove the pan from the heat. Cover and allow the syrup to steep for 30 minutes. Strain the mixture through a fine mesh sieve to remove the mint leaves and orange pulp.
Store in an airtight container in the refrigerator for up to 1 week.
For Blood Orange Mojito
Mix the rum, lime juice, blood orange juice, simple syrup, and mint in a cocktail shaker filled with ice. Shake for about 30 seconds so that the drink is thoroughly mixed and nicely chilled.
Strain into a highball glass filled with ice and top with club soda. Garnish with mint leaves and a slice of blood orange. ENJOY!
Notes
To make a virgin mojito, leave out the rum.I recommend using freshly squeezed juice. It really makes a difference.Nutritional info is for 1 cocktail containing .5 ounces of the simple syrup.
