THE SUMMER EDITION OF POPSICLE WEEK IS FINALLY HERE!!!

Sorry for shouting at you, I’m just really excited to be sharing all of these amazing recipes with you finally! After doing my holiday themed cocktail week last year, I knew that a summer version was needed. Super excited it’s here :)

We’re starting cocktail week out with these Margarita Cocktails which is a recipe from the new cookbook by Live Eat Learn called For the Love of Popsicles. GUYS this is SUCH a good cookbook. I legit want to make every single popsicle recipe in this book and picking just one of them to share with you was near impossible. In the end though, I figured that I could never go wrong with the margarita popsicles.

The only bad part about these popsicles is that you have to wait a good amount of time for them to freeze. Be ready. It’s HARD. But omg so worth it!

How to make margarita popsicles:

To make these boozy popsicles, all you have to do is mix together the ingredients and then pour it into your popsicle mold to freeze. The recipe suggests freezing for an hour before giving the popsicles a stir and then putting in the sticks.This helps keep the lime zest evenly distributed so that it doesn’t all fall to the bottom

Since there’s alcohol in these popsicles, it’s best to let them freeze overnight (SO HARD I know!). But at least 6 hours is what is recommended.

Ingredients 

  • 1 cup of orange juice
  • ½ cup of tequila
  • ¼ cup of lime juice
  • zest of 1 lime
  • 2-3 tablespoons of agave, maple syrup, or honey

Instructions 

  • In a bowl or large measuring cup, combine all of the ingredients and stir to combine.
  • Pour the mixture evenly into your popsicle molds and freeze for 1 hour.
  • Give each popsicle a bit of a stir so that the lime zest doesn’t all fall to the bottom. Cover, put in your popsicle sticks if needed and freeze for 6+ hours or even just overnight.
  • ENJOY! I like to sprinkle mine with a little bit of salt for a more classic margarita taste!

    Ingredients amounts for the popscile size shown is way off, to make the size popsicles here I used 1 cup of OJ, 1/2 cup tequila, 1/8 cup.of Grand Marnier, 4 limes cut and squeezed and 1/4 of bakers sugar, bar syrup or agave syrup. Works great

    Great flavor but even after freezing almost 24 hours these popsicles were more of a slushy consistency. When I pulled these out of the popsicle molds the sticks came out leaving slushy margarita behind. Hi

      glad you liked them and sorry to hear about the consistency! I’ve made these 3 times and they always turned out great. I wonder if it’s the thickness of the molds being used. Either way, I think either decreasing the alcohol a little and adding more orange juice would due the trick for the future.

      Mine were completely solid but did melt super quick
