Lemon Tahini Dressing

Happy Friday! I thought that Fridays wouldn’t matter to me as much when I was working from home but let me tell: I still LOVE Fridays! While I enjoy the hell out of the work that I do, I also enjoy a nice day of relaxing, cooking just for fun, and spending time with Mr. Britnell.

This weekend we’re traveling a few hours away to celebrate Stephen’s nephew’s 1st birthday (yay!). The rest of the weekend will be spent (finally) beginning baby Britnell’s nursery! We’re planning to keep it pretty simple. I ordered the crib this morning and we’ll be painting the walls soon. I have my eyes on a really beautiful fiddle leaf fig tree at the farmer’s market because what nursery is complete without a giant tree!? (that’s sarcasm but I love all the house plants).

Lemon Tahini Dressing

I’ve been doing my best to eat healthy lately. Healthy to me= having a nice hefty side salad with your 3 slices of pizza. Good balance is the key :)

I’ve also been trying to eat foods with less ingredients in them. While I love a good store bought caesar dressing (my FAVORITE actually), making my own at home sometimes is also pretty good. Like this lemon tahini dressing! It’s SUPER easy to make, unless dumping some ingredients in a jar and shaking it together is too difficult for you.  And, it lasts in the fridge for a while. I’m a pretty big fan of nutritional yeast so end up with quite a bit of it in my dressings. But, you could definitely put a bit less in yours if it’s not your thing.

Lemon Tahini Dressing

That’s it for today! We like to keep it short and sweet around here on Fridays so that (maybe) the weekend will get here a bit sooner :) Hope it’s a good one, friends!

Thanks! Very tasty and addictive. I was a bit short on lemon juice and made up the rest of the acid with additional apple cider vinegar. I look forward to making it with the proper ratios next time.

This dressing is actually really good!!!
I’ve tried variations of tahini, lemon, nutritional yeast dressings before and I wasnt too fond of them. I had leftover ingredients so I decided to give a different recipe a shot. The garlic soy sauce and apple cider vinegar go really well in it!

    Thanks!

I don’t know exactly what in about Fridays, but it’s that one day where you can throw some chores (in my case, totally shutdown my laptop for 2 carefree days and saying to my clients “You have no power against me on weekends”) and time to don some favorite dress and have some time with good friends in a nice place.
Or sometimes if I feel that my social butterfly side is a little bit dysfunctional, staying at home while watching netflix series is definitely a good way to loosen up a bit. And oh, did I mention cooking? hahahaha.. Well, thanks to you dear, I can now do something differently this weekend. Easter is coming and this tahini dressing looks a good match to some of my dishes.

Do you use tahini paste? Or what kind of tahini?

The colour of this dressing is so satisfying! It’s like sunshine in a jar! (the most cliche simile ever? Lol) Oh and – that’s so my kind of healthy too. We’re all about balance in this house – oh yeah! Have fun working on the nursery!
