I used fresh corn from the farmer’s market to make this yummy soup. It was easy to make and had awesome flavor. I will put this in my meal prep rotation.

I added a Yam along with the potatoes as I think corn and yams go well together. My son is Vegan and I’m often looking for recipes he will enjoy without killing an animal.
