I made these veggie enchiladas tonight for Valentine’s Day, and they were great! The recipe was simple, but very flavorful. I will definitely be making these again, and recommending to family and friends!

Absolutely delicious!  Used violfe vegan feta in the tortilla and on top. Added a few pimento stuffed olives on top before baking. Served with lettuce tomatoes avac ado and green onions.

I’ve found that if you heat the corn tortillas up in the microwave for just about 20 seconds, it makes them a bit easier to work with and less likely to tear. Also, when mine tear, I find that it’s usually a smallish tear and that they still work okay so I just go with it knowing that they might not be the prettiest but they’ll still be tasty :)
