This chipotle mayo is a new favorite! It is CRAZY good and it takes less than 10 minutes to whip up. Can’t beat that!

Sauces, dips and condiments really are the best way to elevate a meal. Here’s a few reasons why we can’t get enough of this delicious mayo:

  • Quick + easy! All you need to make this chipotle mayo recipe is about 10 minutes and a blender or food processor.
  • Minimal ingredients. Only three key ingredients, plus mayo is needed.
  • Versatility. There are so many ways to use this dip/condiment; use it on burgers, for fries, on tacos or nachos and you can make it as mild or as spicy as you’d like!
  • So delicious! It’s a total home-run sauce; we love it!

What are chipotle peppers in adobo sauce?

Chipotle peppers in adobo is the secret to making this delicious chipotle mayo recipe! If you’re not familiar with this ingredient, let’s discuss.

You’ll find canned chipotle peppers in adobo at most grocery stores (check the international or Mexican foods aisle). Chipotle peppers are red jalapeños that have been smoked and dried. Adobo is a tangy, slightly sweet, Mexican red sauce often comprised of tomatoes, garlic, vinegar, and spices. The chipotle peppers have an intense smoky heat, but the sauce on its own has a slightly less fiery smoky heat.

This chipotle mayo recipe uses some of the peppers and some of the adobo sauce for an incredibly flavorful sauce, you’ll want to drizzle over almost everything!

Ingredients in chipotle mayo:

We’re taking traditional mayo and adding tons of flavor, a bit of smokiness and a kick of heat. YUM. Here’s what you’ll need:

  • Mayonnaise. This recipe uses mayo as the base to make it extra creamy. Feel free to sub some or all of the mayo with Greek yogurt to lighten up this recipe. Use vegan mayo (or Greek yogurt), as desired.
  • Chipotle peppers +adobo sauce. You’ll need one can of chipotle peppers in adobo sauce. See the image below for a visual of what this can looks like. Do NOT use the whole can, you’ll more than likely only want to use three peppers and 1-1/2 tablespoons of the adobo sauce. If you want this dip extra spicy, you can always add a bit more adobo sauce.
  • Garlic. A must for any type of spread or dip!
  • Sea salt. To bring out the flavors in the mayo.
  • Lime juice. You’ll want to add a bit of acidity to balance the spiciness and lime pairs deliciously with the chipotle flavor. Feel free to add in a bit of lime zest too.

How to make chipotle mayo:

This chipotle mayo recipe could not be more quick and easy! Simply add all of the ingredients to a blender or food processor and blend until creamy. Taste and add salt and pepper, as desired. If you want the chipotle mayo to taste even spicier, add a bit more adobo sauce. On the other hand, if you’re sensitive to spicy foods, you can start with just one pepper, taste and then add more as needed.

Recipe tips:

  • To make the chipotle mayo recipe less spicy, cut open the chipotle peppers and scrape out the seeds and discard. I rarely do this and just leave them, but it’s up to you.
  • If you want to use this chipotle mayo sauce as a dressing, add a small amount of water a little at a time until the dressing is a pourable consistency. But avoid adding too much water as it can dilute the flavor.
  • This chipotle mayo sauce will keep well in an airtight container in the refrigerator for up to about 3 weeks. Simply give it a stir and add a bit of water (as needed) before using it.
  • You will have leftover chipotle peppers and adobo sauce. I recommend freezing the leftovers in a freezer-safe bag or container. It will keep for about 3 months and can thaw easily whenever you need to use it.

Ways to serve chipotle mayo

Chipotle mayo is so delicious drizzled on salads, tacos and burrito bowls or used as a dip for chips, sweet potato fries and veggies. Here are some recipes I love to pair it with:

Ingredients 

  • 1 ½ cup mayonnaise, vegan as desired*
  • 3 chipotle peppers in adobo sauce
  • 1 ½ tablespoons of the adobo sauce
  • 3 cloves of garlic
  • pinch of sea salt
  • ½ teaspoon of lime juice
  • Optional: ¼ teaspoon of lime zest

Instructions 

  • If you want a less spicy sauce, cut open the chipotle peppers and scrape out the seeds and discard. I rarely do this and just leave them in but it’s up to you.
  • Add all of the ingredients to a blender or food processor and blend until creamy and only a few lumps remain.
  • Taste and season with additional salt and pepper as desired. If you want it even spicier, you can also add in more of the adobo sauce.
  • Serve and enjoy! I love this on tacos and nachos! Store in an airtight container in the fridge for up to 3 weeks.

*You can also use plain Greek yogurt – there are some good vegan greek yogurts on the market as well.
