I love this sweet potato recipe for the fall. The cumin makes the black beans really flavorful and contrasts the sweetness of the potatoes nicely.

This was so tasty and filling. It was perfect for dinner. I cook for one so decreased recipe – I did make the cream sauce for two servings. I also used plain yogurt for the sauce as I’m pescatarian. The extra sauce really made the combo of potato, beans and avocado pop with flavor!

What a meal! I expected mediocre because I have not been a huge fan of sweet potatoes, but this blew me away. I added additional spices, and used double the beans cuz we love black beans. The potato with beans with the sauce was exquisite! You hit a home run with this. I’m not a vegetarian, but with a recipe like this, meat is irrelevant. Thank you!

I upped the lime juice and the seasonings to taste. I also added cooked chicken when I sautéed the onion and beans. A different and tasty recipe. Thank you for sharing.

Thanks for this recipe. My family loves it. It’s easy to prepare. I love the cashew cream and find plenty of uses for any that is leftover. The bean topping is so good I automatically double the batch.

I made this a second time and we love it! Take the time to make the cashew cream; I cut the recipe in half and it made plenty with left-over I will use with other vegetables.
