This Vegetarian Sushi Bake is my take on the VIRAL trend that has been ALL over Tiktok and Instagram for many months! Instead of fish, we’re using a simple tofu mixture to keep this close to the original BUT fully meat and seafood free.
If you’ve been on social media AT ALL over the past 6 months then chance are, you’ve seen the VIRAL Sushi Bake. It’s typically made with salmon or tuna but you KNOW I had to make a fully vegetarian (vegan friendly) version of it!
I wanted to keep this as close to the original as possible so I simply swapped the meat for tofu (obviously because I’m obsessed) but kept everything else pretty much the same.
And while my recipe sin’t fully vegan, all you need to do to make it plant based is simple use vegan mayo and cream cheese and you have yourself a vegan sushi bake!
Ingredients we’re working with:
- Tofu: we’re going to marinate the tofu in a simple soy sauce mixture before then mixing in cream cheese, furikake, mayo, and sriracha. It’s simple but ends up being SUCH a delicious combination.
- Sushi rice: simple short grain rice mixed with rice vinegar.
- Furikake: if you’ve never used this before, it’s also referred to as rice seasoning. It’s a mixture of crumbled nori (seaweed), toasted sesame seeds, sugar and salt. This helps give the whole dish flavor (specifically a more fishy flavor)
- Kewpie Mayo: this is a Japanese brand of mayo but you can use regular mayo as well OR a vegan mayo.
- Sriracha
- All of your favorite sushi fixings: I used cucumber, sushi sauce, spicy mayo, avocado and green onions!
To make it:
This comes together quickly as well!
Start out by tearing your tofu into chunks about the size of a quarter. Place them in a large bowl and pour on the marinade ingredients and let sit for about 30 minutes. I tried this recipe once without really marinating the tofu and it turned out well! But, I suggest letting it sit for optimal flavor if possible.
Next, mix into the tofu the whipped cream cheese, kewpie mayo, sriracha. Set aside while you prep the rest.
Make the sushi rice and then press it firmly into your casserole dish. Top with a nice layer of furikake or nori sheets and then spread the tofu mixture on top.
Drizzle with a little additional mayo and bake!
All that’s left is to simple top with your favorite sushi fixings!

Ingredients
For the tofu
- 14-16 ounce firm tofu, extra firm, or super firm tofu
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil, I used toasted
- 1 tablespoon rice wine vinegar
- 1 tablespoon furikake
- ¼ cup whipped cream cheese, regular also works at room temperature
- 2 tablespoons kewpie mayo, regular also works
- 1 tablespoon sriracha
For the sushi rice
- 2 cups uncooked sushi rice
- 2 tablespoons rice vinegar
- 2 tablespoons white wine vinegar
- To assemble
- 1 heaping tablespoon of furikake
- Optional drizzle of kewpie mayo
To serve
- Sriracha
- Unagi sushi sauce
- ½ cucumber
- ½-1 avocado, thinly sliced or diced
- ¼ cup green onions
- ½ tablespoon sesame seeds
- Seaweed snacks/ nori for serving
Instructions
- Cook your rice according to package instructions. Once done, place in a large bowl in the fridge to cool down. Once cool, mix in the rice vinegar and white wine vinegar and set aside.
- Meanwhile, marinate your tofu: break or cut the tofu into small chunks (roughly the size of a quarter). Place in a large bowl and mix in the soy sauce, sesame oil, rice vinegar, and furikake. Let marinate for 30 minutes or up to overnight.
- After the tofu has marinated, mix in the cream cheese, kewpie mayo, and sriracha (leaving all of the marinade in the bowl as well). Set aside.
- Assemble: pre-heat the oven to 400 degrees F. Grease a 9×13 casserole dish.
- Pour the rice into the bottom of the prepared dish and spread it out so that it’s evenly packed into the pan. Sprinkle on 1 heaping tablespoon of furikake and then spread the tofu mixture on top so that it’s even. Top with an additional (but optional) drizzle of kewpie mayo.
- Bake for 15 minutes. Remove from the oven and top with green onions, cucumber, and avocado plus a good drizzle more of mayo, sriracha, and sushi sauce. Sprinkle with sesame seeds and ENJOY!
