This Radish Ricotta Toast is made with fresh radishes that are either raw OR sautéed for a burst of flavor that you will absolutely love!

A few years ago, Ricotta toast took social media by storm, and everyone was cooking up cherry tomatoes to put on top. BUT TODAY, we’re making ricotta toast with some romaine lettuce AND RADISHES!

I have a serious love for radishes and have been eating them so much the past year. I’ve always enjoyed them raw BUT I only recently discovered HOW GOOD they are cooked. It brings out the sweetness in them and makes them these juicy little bites of flavor. I’m obsessed!

More often than not, I roast my radishes BUT for this recipe, we’re actually going to sauté them. I kind of hate turning my oven on if I can avoid it AND sautéing them ends up being much quicker.

All of that being said, you can also make this recipe with raw sliced radishes if you prefer. I do that often when I’m in a rush and it’s absolutely delicious!

The romaine lettuce adds a nice crunch to the toast plus, I’m always aiming to get in my greens!

I topped my toast with a good drizzle of olive oil, balsamic glaze AND a bit of pesto for maximum flavor.

Ingredients 

  • ¼ cup of chopped or sliced Dandy® Ready Radishes
  • 1 teaspoon of olive oil, plus more for the toast
  • Salt and pepper to taste
  • 1 large slice of bread, I love sourdough with this!
  • ¼ cup of ricotta cheese*
  • ¼ cup of packed Dandy® Romaine lettuce, thinly sliced
  • 1 tablespoon of pesto, optional
  • Sprinkle of sea salt and pepper
  • Sprinkle of Italian seasoning
  • Drizzle of balsamic glaze

Instructions 

  • Start by sautéing your radishes (or skip this step if serving the toast with raw radishes!). In a medium skillet, heat 1 teaspoon of olive oil over medium heat. Once hot, add in the radishes and saute for 6 minutes, stirring often until the radishes soften and get lightly golden brown around the edges. Remove from the heat.
  • Brush the olive oil on one side of the bread and toast until it reaches your desired level of crispiness.
  • Spread the ricotta onto the olive oil side of the toast. Sprinkle with sea salt, pepper, and Italian seasoning.
  • Top with the romaine lettuce, radishes, and a drizzle of pesto + balsamic glaze. ENJOY!
