Lavender Syrup is a sweet, floral, flavorful mix-in for making delicious drink recipes! It’s as easy to make as any other simple syrup and requires just 3 ingredients. Perfect for flavoring coffee, cocktails, lemonade, iced tea, and more!
I’ve been making this lavender syrup recipe a lot over the last few years and I figured that it was time for it to have it’s own dedicated blog post. I have a whole tutorial on how to make simple syrup with lots of different kinds of sweeteners and flavors including lavender. But this is my all time favorite and I make it often!
I love to use this lavender simple syrup for coffee, cocktails, and even to sweeten oatmeal. Basically, I just want everything to taste like lavender. It never gets old :)
Ingredients needed
Why spend a small fortune on a craft cocktail or fancy coffeehouse beverage when you can make it at home? All you need is the right ingredients, like this lavender syrup! Just like regular simple syrup, but made with fresh or dried lavender flowers. Here’s everything you’ll need:
- Water. I like to use filtered water for the best taste.
- Sweetener of choice. Sugar, coconut sugar, honey and maple syrup will all work. However, to get a bit of purple color in your syrup, use regular granulated white sugar. Other sweeteners may darken the color of the simple syrup.
- Dried lavender. Be sure to purchase dried lavender flowers or buds that are food-grade. Here’s an option from Amazon.
How to make this recipe
Making lavender syrup could not be easier! Here’s the simple process:

- Combine + heat ingredients. Add all of the ingredients to a medium saucepan. Bring to a boil and then lower heat to simmer. Cook on low for 5 minutes and stir to make sure sugar dissolves completely. Once the syrup has thickened, simply remove from the heat and let cool.
- Strain. It will be necessary to strain out the lavender by passing the liquid through a fine mesh strainer.
- Store. Pour syrup into an airtight container for storage.
Flavor variations
- Rose simple syrup. Feel free to sub out the lavender flowers with edible dried rose petals. You’ll follow the same recipe method, but instead make rose syrup. It’s a rose flavored simple syrup (liquid sugar) that you can use to make lattes, teas and sodas.
- Lavender honey syrup. Simply swap out the sugar for an equal amount of honey. Super simple and a great natural alternative with a lovely honey flavor. You can do the same thing with pure maple syrup, if you’d like a maple flavor in your drink.
Serving suggestions
There are so many different ways to use this recipe! And they all happen to be super delicious! Here’s some options we love:
- Mix with sparkling water to make lavender flavored soda.
- Pour in steamed or warm milk to make an instant lavender latte.
- Add to iced tea or hot lavender tea for an extra boost of lavender flavor.
- Make refreshing lavender cocktails.
- Stir it into yogurt, frozen yogurt and/or oatmeal. So good!

How to Make Lavender Syrup
Ingredients
- 1 cup of sugar, can sub for an equal amount of: coconut sugar, honey, maple syrup, brown sugar, or agave
- 1 cup of water
- 1 ½ tablespoons of dried or fresh lavender flowers
Instructions
- In a small saucepan, combine the water, sugar, and lavender and place over medium heat.
- Bring the mixture to a simmer and lower the heat a bit. Cook over low heat, stirring frequently, for about 5 minutes at which time the sugar should have completely dissolved and the syrup started to thicken.
- Let cool slightly and then strain the mixture through a sieve to remove the lavender. Pour into an airtight container for storage.
